The first year my advice is make sure there is a big earth bowl round them, up to 1 metre in width. Water weekly, like at least 10 litres, around the bowl, not against the trunk. After the first year olives love some compost laid over the bowl in autumn ready for their fruiting. While Olives will grow, albeit slowly, with very little water to get the most out of the fruit I would recommend soaking the root bowl once a month if there has been no rain.
Bon Chance
